QUICK TACOS BREAKFAST RECIPE IN EASY STEPS
How do you make morning tacos?
When you've created the tomatillo salsa, just arrange your corn tortillas on a baking sheet, top with cheese and an egg, and broil until the egg is cooked to your preference. Just add your favourite toppings and serve!
Ingredients
8 petite corn tortillas
10 small tomato's husks removed
8 medium eggs
2 cups razor coarsely grated Cheddar cheese
1 jalapeno, peeled and halved
1 tablespoon olive oil
2 tablespoons lime juice
Kosher salt
2 cups cilantro, fresh
Serve with cooked bacon and sliced radishes.
STEPS TO MAKE TACOS
- Set one oven rack 6 inches from the broiler and another 12 inches below it; heat the broiler. Toss tomatillos and jalapeno with oil and a sprinkle of salt on a wide rimmed baking sheet. Broil on top rack for 8 to 10 minutes, or until tender and browned in areas. Place in a blender.
- In the meantime, lay the tortillas on a second rimmed baking sheet. Sprinkle 1/4 cup cheese over each tortilla, leaving a little well in the middle. Each one should be topped with an egg (cheese should prevent egg from spilling off tortilla). Broil on the center rack until done to preference, 4 to 6 minutes for a runny yolk.
- In a blender, purée the veggies with the cilantro, lime juice, and 1/4 small spoon salt until smooth. If preferred, top tacos with salsa and radishes.
