    TOMATOES

    • Tomatoes - 4 (if large) 8 (if small)  

    • Extra-virgin olive oil - 4 Spoon

    Tomato Herb Topping

    1. Wash and cut medium to big tomato into little pieces. If desired, remove the seeds from the tomatoes. In a mixing dish, combine the diced tomatoes.
    2. Add fresh basil leaves, chopped, and tiny garlic clove, minced or grated. 
    3. Sprinkle with 1/4 spoon crushed black pepper.
    4. Season with salt as per taste.
    5. 2 small spoon extra virgin olive oil.
    6. Combine well. 1/4 small spoon balsamic vinegar or lemon juice can be used for a bright, acidic flavor.

    Refrigerate the tomato mixture for 30 minutes or up to an hour or two to allow the flavors to mingle.




    Bruschetta Bread

    1. Cut the baguette into 0.75-inch-wide slices.
    2. Preheat oven to 400°F for toasting bread. Coat both sides of the bread gently with oil and lay on a large baking sheet. Toast the bread for 10 to 15 minutes, flipping halfway through. 
    3. Let bread to cool for 5 minutes before rubbing tops with half garlic cloves.
    4. Spread the tomato basil mixture on each toasted bread and serve right away.
